he was a big sucker (we only used a small portion of him)So while my dad was at work, my step mom and I baked this yummy cake. We followed the recipe (linked above) pretty closely, but we didn't glaze it. I had a piece while it was still hot and the chips melty with a cold glass of milk. yum!

Pretty sure this was my first time baking a cake from scratch and my first time ever making a bundt cake! hmmm, I think I can add this too my 'healthy' recipes. right? =D hehe
Good job! The remainder of the zucchini (shredded) can be frozen for later use. I'm made an orange zucchini bread with a glaze each year at Christmastime. It is also yummy!
ReplyDeleteOh, I forgot. if you freeze it, squeeze some of the joice out first or put it on a paper towel to drain a little.
