the Sunday Special - Chocolate Zucchini Cake

I was staying with my dad and step mom this week and their neighbor gave them this huge zucchini. They are not big fans of zucchini and were stumped at what to make with it. Leave it to me to google recipes. I read off the different options and we decided on Chocolate Zucchini Cake.

So while my dad was at work, my step mom and I baked this yummy cake. We followed the recipe (linked above) pretty closely, but we didn't glaze it. I had a piece while it was still hot and the chips melty with a cold glass of milk. yum!

Pretty sure this was my first time baking a cake from scratch and my first time ever making a bundt cake! hmmm, I think I can add this too my 'healthy' recipes. right? =D hehe

  1. Good job! The remainder of the zucchini (shredded) can be frozen for later use. I'm made an orange zucchini bread with a glaze each year at Christmastime. It is also yummy!

  2. Oh, I forgot. if you freeze it, squeeze some of the joice out first or put it on a paper towel to drain a little.
