Tomorrow we leave for our road trip up the west coast. i am almost finished packing. took a lil' break to make leek and potato soup. turned out yummy. here's a link to a recipe i used as a guidance. i used red/new potatoes, added half a yellow bell pepper, no onion, didn't have any cheddar or chives (that's parsley on top), used a dollop of sour cream instead of half n half, and low sodium vege broth instead of chicken. let me know if you try it out.
